Strawberry Sauce

Serves 4

Ingredients

  • 2 medium cooking apples, peeled, cored and finely chopped
  • 3 tbsp fresh lemon juice
  • 175g strawberries, chopped
  •   sugar, to taste

Method

  1. Place the apple in a pan with one tablespoon of water, cover and cook gently until pulpy. Add lemon juice and simmer briefly.
  2. Press the apple through a nylon sieve with half of the strawberries, then leave to cool. When cold, stir in the remaining strawberries and sweeten to taste.

Notes

Can be frozen for up to 6 months. Perfect with ices, pancakes, desserts and fruit salad.
