Ingredients
- 350g / 12oz mixed summer fruits, fresh or frozen, puréed and sieved
- 2 tablespoons sugar
- 5 tablespoons cassis
- sparkling wine, chilled
Method
- Blend 350g/12oz mixed fresh or frozen summer fruits to a purée with two tablespoons of sugar in a food processor or blender.
- Press through a fine sieve and stir in five tablespoons of cassis.
- Pour a little purée into each wine glass, then top up with chilled sparkling wine.
