Summer Fruit Kir Royale

Ingredients

  • 350g / 12oz mixed summer fruits, fresh or frozen, puréed and sieved
  • 2 tablespoons sugar
  • 5 tablespoons cassis
  •   sparkling wine, chilled

Method

  1. Blend 350g/12oz mixed fresh or frozen summer fruits to a purée with two tablespoons of sugar in a food processor or blender.
  2. Press through a fine sieve and stir in five tablespoons of cassis.
  3. Pour a little purée into each wine glass, then top up with chilled sparkling wine.
