Ingredients

  •   leek, fried
  •   cooked chicken
  • a little cream
  •   mustard
  •   cheddar cheese, cubed
  • 6 layers filo pastry, cut into rounds
  •   spinach, fried in hot pan very quickly till just wilting
  •   cheese, grated
  • a little bit egg, whisked

Method

  1. Mix fried leek with cooked chicken, a little cream, mustard and cubes of cheddar cheese.
  2. Take 6 layers of filo pastry cut into rounds. Fry spinach in a hot pan very quickly till just wilting. Add grated cheese and a little bit of whisked egg. Put spoonfuls into the centre of rounds, fold pastry over and cook for about 10 minutes in a moderate oven.

Notes

Two filling options are described: (1) fried leek with cooked chicken, cream, mustard and cheddar cheese cubes; (2) spinach with grated cheese and whisked egg in filo pastry rounds.
