Lyonnaise Potatoes

Ingredients

  • 4 medium potatoes, parboiled
  •   oil, for shallow frying
  • 1 onion, peeled
  •   coarse sea salt
  •   parsley, chopped

Method

  1. Slice the potatoes and fry until golden on each side in oil.
  2. Meanwhile slice the onion.
  3. Lift out potatoes, drain on kitchen paper and keep warm.
  4. Tip off excess oil, leaving just enough to cover the pan. Fry onion until golden.
  5. Toss the fried onion into the potatoes with some coarse salt and scatter liberally with chopped parsley.

Notes

The onion family is on friendly terms with the potato, the flavours and textures blending amicably in several classic recipes. Perhaps the most self-indulgent yet is soft and golden onion slices mixed into a dish of crisply fried potato slices.
