Ingredients
- 1.25kg/2½ lb small new potatoes
- large handful fresh basil, chopped
- 150g/5oz natural yogurt
- ½ tbsp lemon juice
- 1 tbsp clear honey
- seasoning
- fresh basil, chopped, to garnish
Method
- Cook the potatoes in a large pan of lightly salted, boiling water for 10-15 minutes until completely tender. Drain.
- Meanwhile, mix basil, yogurt, lemon juice and honey. Season.
- Stir the drained potatoes into the basil sauce while they are still warm, then chill thoroughly. Sprinkle with the remaining basil just before serving.
