New Potatoes with Basil

Serves 6 Prep 10 min Cook 15 min

Ingredients

  • 1.25kg/2½ lb small new potatoes
  • large handful fresh basil, chopped
  • 150g/5oz natural yogurt
  • ½ tbsp lemon juice
  • 1 tbsp clear honey
  •   seasoning
  •   fresh basil, chopped, to garnish

Method

  1. Cook the potatoes in a large pan of lightly salted, boiling water for 10-15 minutes until completely tender. Drain.
  2. Meanwhile, mix basil, yogurt, lemon juice and honey. Season.
  3. Stir the drained potatoes into the basil sauce while they are still warm, then chill thoroughly. Sprinkle with the remaining basil just before serving.
