Ingredients
- 6 ozs plain flour
- 1 lb treacle
- 2 ozs butter or margarine
- 1 oz candied peel
- 1 oz brown sugar
- 4 teasp. bicarbonate of soda
- 1 level teasp. ground ginger
- ¼ pint milk
- 1 large egg, beaten
Method
- Place flour, ginger and peel in a mixer bowl. Whisk at low speed until evenly distributed.
- Put butter, sugar and treacle into a saucepan and warm gently until dissolved.
- Beat the egg in a small basin.
- Dissolve the soda in 1 tablespoonful of warm water.
- When the melted ingredients are cool, combine with the remaining ingredients (flour mixture, beaten egg, dissolved soda and milk).
- Turn into a greased 6 inch square cake tin and bake for 1½ hours at 325°F (Gas 2-3).
