Spiced Lemon Marinade & Baste

Ingredients

  • rind of 1 lemon lemon rind, grated
  • 60ml (4 tbsp) lemon juice
  • 30ml (2 level tbsp) demerara sugar
  • 45ml (3 tbsp) oil
  • 2.5ml (¼ level tsp) ground ginger
  • 2.5ml (¼ level tsp) cinnamon, ground
  • 2.5ml (¼ level tsp) paprika
  • 2.5ml (¼ level tsp) curry powder
  • 1 bay leaf, crushed
  • a pinch ground nutmeg

Method

  1. Combine the grated rind of a lemon and 60ml (4 tbsp) juice, 30ml (2 level tbsp) demerara sugar, 45ml (3 tbsp) oil, 2.5ml (¼ level tsp) each ground ginger, cinnamon, paprika and curry powder, a bay leaf (crushed) and a pinch of ground nutmeg. Use to marinate meat or poultry for several hours before cooking, or baste over food during cooking, or serve hot alongside barbecued meat.

Notes

Good either to serve hot and bubbling with barbecued meat, to marinate it in before cooking, or to baste it with during cooking. Recipe appears to be incomplete — the text cuts off partway through.
