Ingredients
- 4 med/large potatoes, boiled, roughly mashed
- 3 handfuls spinach, washed, steamed over potatoes
- 1 med/sm onion, finely chopped, fried
- 1 med carrot, finely chopped, fried
- 200ml cream, warmed slowly with onion and carrot
- salt and pepper
- grated cheese
- 3/4 lb cod, sliced
- 1/2 lb smoked cod or haddock, sliced
- 2 eggs, boiled, segmented
Method
- Boil 4 med/large potatoes with salt and pepper. After 5 mins add 2 eggs to boil.
- Wash 3 handfuls of spinach and steam over the potatoes.
- Finely chop 1 med/small onion and 1 med carrot, then fry slowly in butter.
- When cooked, add 200ml cream and stir while warming slowly, then take off heat. Add salt and pepper and grated cheese.
- Slice 3/4 lb cod and 1/2 lb smoked cod or haddock. Place fish in the bottom of a shallow dish and cover with the sauce.
- Place segmented boiled eggs over the fish and sauce, then add the cooked spinach.
- Cover everything with roughly mashed potatoes.
- Cook in oven at 225° for 35 mins.
