Fish Pie

Serves 4 Cook 35 min

Ingredients

  • 4 med/large potatoes, boiled, roughly mashed
  • 3 handfuls spinach, washed, steamed over potatoes
  • 1 med/sm onion, finely chopped, fried
  • 1 med carrot, finely chopped, fried
  • 200ml cream, warmed slowly with onion and carrot
  •   salt and pepper
  •   grated cheese
  • 3/4 lb cod, sliced
  • 1/2 lb smoked cod or haddock, sliced
  • 2 eggs, boiled, segmented

Method

  1. Boil 4 med/large potatoes with salt and pepper. After 5 mins add 2 eggs to boil.
  2. Wash 3 handfuls of spinach and steam over the potatoes.
  3. Finely chop 1 med/small onion and 1 med carrot, then fry slowly in butter.
  4. When cooked, add 200ml cream and stir while warming slowly, then take off heat. Add salt and pepper and grated cheese.
  5. Slice 3/4 lb cod and 1/2 lb smoked cod or haddock. Place fish in the bottom of a shallow dish and cover with the sauce.
  6. Place segmented boiled eggs over the fish and sauce, then add the cooked spinach.
  7. Cover everything with roughly mashed potatoes.
  8. Cook in oven at 225° for 35 mins.
