Ingredients

  •   salmon, cut into 2in squares
  • a little dab tomato purée
  • a slice per piece mushroom, sliced
  •   mozzarella, grated

Method

  1. Cut salmon into 2in squares. Place in an oven dish, skin side down.
  2. Smear a little dab of tomato purée on each piece, then add a slice of mushroom.
  3. Cover with grated mozzarella and cook for 5–7 minutes at Gas Mark 6.
