Pease Pudding

Ingredients

  • ½ lb split peas, soaked overnight in cold water
  • 1 oz butter
  • 1 egg
  • 1 ham bone or bacon scraps
  • 1 teasp sugar
  •   salt and pepper, to taste

Method

  1. Wash peas well. Soak overnight in cold water.
  2. Tie loosely in a cloth. Place in pan with a pinch of salt and boiling water to cover. Add bone or scraps.
  3. Boil 2–2½ hours until soft.
  4. Drain bag of peas, sieve and add butter, egg, sugar, and salt and pepper to taste.
  5. Beat thoroughly. Tie up tightly in a floured cloth and boil for another ½ hour.
  6. Turn on to hot plate to serve.

Notes

Soak peas overnight in cold water before cooking.
