Ingredients
- ½ lb split peas, soaked overnight in cold water
- 1 oz butter
- 1 egg
- 1 ham bone or bacon scraps
- 1 teasp sugar
- salt and pepper, to taste
Method
- Wash peas well. Soak overnight in cold water.
- Tie loosely in a cloth. Place in pan with a pinch of salt and boiling water to cover. Add bone or scraps.
- Boil 2–2½ hours until soft.
- Drain bag of peas, sieve and add butter, egg, sugar, and salt and pepper to taste.
- Beat thoroughly. Tie up tightly in a floured cloth and boil for another ½ hour.
- Turn on to hot plate to serve.
Notes
Soak peas overnight in cold water before cooking.
