Ingredients
- Desirée (waxy) potatoes, cut on mandolin or in food processor, steeped in water 30-40 mins, drained and patted dry
- a little oil
- parsley, chopped
- rosemary, chopped
- thyme, chopped
- small amount onion, chopped
- salt
- pepper
- a cup good stock
Method
- Cut potatoes on a mandolin or in a food processor.
- Steep in water for 30–40 minutes, then drain and pat dry.
- Put a little oil in a roasting pan and layer with potato slices (about 5 layers).
- Sprinkle with chopped parsley, rosemary, and thyme (add herbs at end of each layer), a small amount of chopped onion, and salt and pepper. Then add more layers.
- More oil — finally add a cup of good stock. Put it in a hot oven. (Note: recipe appears incomplete.)
