Ingredients
- belly pork, cut into 1 inch cubes with skin left on
- 4 tablespoons soy sauce
- 1 tablespoon water
- 2 inch length cinnamon stick
- 1 dessertspoon ginger root, chopped
- star anise
- 1 teaspoon white granulated sugar
- 3 tablespoons dry sherry or similar
Method
- Use a flat piece of pork cut into 1 inch cubes with skin left on. Place skin side down into a casserole.
- Add 4 tablespoons soy sauce, 1 tablespoon water, a 2 inch length of cinnamon stick, 1 dessertspoon chopped ginger root, and star anise.
- Place casserole to simmer, then cook on very low heat for 45 minutes with lid on. Turn pork pieces after 10 minutes to coat the cubes.
- When cooked, sprinkle with 1 teaspoon white granulated sugar and 3 tablespoons dry sherry or similar over the heat.
- Leave cooking on very low heat, turning pork cubes after 20 minutes. Cook for 25 minutes more.
- Serve with rice or mashed potatoes and stir fried vegetables.
