Ingredients
- 3 ozs butter, creamed
- 3 ozs sugar, creamed with butter
- grated rind of 1 lemon, grated
- 2 egg yolks
- 1 tub (3-4 ozs) ricotta cheese
- 2 egg whites, whisked
- 1 teasp baking powder
- 3 ozs flour
Method
- Cream butter and sugar together.
- Add grated rind of 1 lemon.
- Add 2 egg yolks and 1 tub (3-4 ozs) ricotta cheese and mix.
- Whisk 2 egg whites and add to mix, folding in carefully.
- Then add 1 teaspoon baking powder and 3 ozs flour and fold in.
- Put into a greased and floured cake tin. Bake for 35 minutes in a gas mark 6 oven.
- Serve with double cream and fruit.
