Choc Flan

Ingredients

  • 12 ozs plain chocolate, chopped
  • 2 ozs butter
  • 1 tablsp double cream
  • 2 tablsp rum
  • 3 eggs, beaten until very creamy
  • 4 ozs caster sugar
  •   flan pastry case, ready cooked

Method

  1. Melt the chocolate, butter, double cream and rum over hot water. Stir occasionally while melting.
  2. Beat 3 eggs until very creamy with 4 ozs caster sugar (in machine).
  3. When the chocolate is all melted and smooth, add the egg mixture a little at a time until all mixed in.
  4. Place in a ready cooked flan pastry case and bake in a moderate oven for 15–20 minutes.
  5. Serve with clotted cream.
