Ingredients
- 2 lb blade or shoulder British pork, skinned, diced
- 1 oz seasoned flour
- 2 tablespoons oil
- 2 onions, sliced
- 1 lb carrots, sliced
- 2 green peppers, de-seeded, sliced
- 3/4 pint stock, from meat cube
- salt and pepper
- 8 oz can baked beans in tomato sauce
Method
- Toss pork in seasoned flour.
- Heat oil and fry meat until lightly browned.
- Put into casserole with onions, carrots, peppers, stock and seasoning, and mix well.
- Cover casserole with tight-fitting lid and place in oven at Gas mark 3, 325°F / 170°C for 3 hours.
- Add beans for the final 30 minutes of cooking.
- Serve with jacket potatoes.
