Pork and Bean Casserole

Serves 4-6 Cook 3 h

Ingredients

  • 2 lb blade or shoulder British pork, skinned, diced
  • 1 oz seasoned flour
  • 2 tablespoons oil
  • 2 onions, sliced
  • 1 lb carrots, sliced
  • 2 green peppers, de-seeded, sliced
  • 3/4 pint stock, from meat cube
  •   salt and pepper
  • 8 oz can baked beans in tomato sauce

Method

  1. Toss pork in seasoned flour.
  2. Heat oil and fry meat until lightly browned.
  3. Put into casserole with onions, carrots, peppers, stock and seasoning, and mix well.
  4. Cover casserole with tight-fitting lid and place in oven at Gas mark 3, 325°F / 170°C for 3 hours.
  5. Add beans for the final 30 minutes of cooking.
  6. Serve with jacket potatoes.

Notes

Temperature: Gas mark 3, 325°F, or 170°C. Serve with jacket potatoes.
