Braised Red Cabbage

Ingredients

  • 1 sm red cabbage, small
  • 1 onion, sliced
  • 1 oz butter
  • 1 cooking apple, peeled and sliced
  • 1 eating apple, peeled and sliced
  • 2 tsp brown sugar
  • 2 tsp malt vinegar
  • pinch ground cloves
  •   salt
  •   black pepper, freshly ground

Method

  1. Shred the cabbage, discarding stalks. Rinse well.
  2. Fry the onion in butter only till soft.
  3. Add the drained cabbage, apples, sugar, vinegar and cloves. Season.
  4. Cover tightly and cook slowly. Mix well and stir every 15 minutes. Cook for 2 hours until the mixture is shiny, dark and soft. May have to add a little water during cooking.
  5. Add more salt, pepper or sugar if necessary.
