Ingredients
- 1 sm red cabbage, small
- 1 onion, sliced
- 1 oz butter
- 1 cooking apple, peeled and sliced
- 1 eating apple, peeled and sliced
- 2 tsp brown sugar
- 2 tsp malt vinegar
- pinch ground cloves
- salt
- black pepper, freshly ground
Method
- Shred the cabbage, discarding stalks. Rinse well.
- Fry the onion in butter only till soft.
- Add the drained cabbage, apples, sugar, vinegar and cloves. Season.
- Cover tightly and cook slowly. Mix well and stir every 15 minutes. Cook for 2 hours until the mixture is shiny, dark and soft. May have to add a little water during cooking.
- Add more salt, pepper or sugar if necessary.
