Ingredients
- 1 teaspoon vegetable or sunflower oil
- 1 onion, sliced
- 1 red pepper, diced
- 1 clove garlic, crushed
- 400g can chopped tomatoes, canned
- 1/2 teaspoon dried mixed herbs
- 2 tablespoons tomato purée
Method
- Heat 1 teaspoon vegetable or sunflower oil in a non-stick pan and add 1 onion, sliced, 1 red pepper, diced, and 1 clove garlic, crushed.
- Stir and add a 400g can chopped tomatoes, 1/2 teaspoon dried mixed herbs and 2 tablespoons tomato purée.
- Simmer for 20 minutes.
- Divide mixture into two and refrigerate or freeze.
