Tomato Sauce

Serves 2 portions Cook 20 min

Ingredients

  • 1 teaspoon vegetable or sunflower oil
  • 1 onion, sliced
  • 1 red pepper, diced
  • 1 clove garlic, crushed
  • 400g can chopped tomatoes, canned
  • 1/2 teaspoon dried mixed herbs
  • 2 tablespoons tomato purée

Method

  1. Heat 1 teaspoon vegetable or sunflower oil in a non-stick pan and add 1 onion, sliced, 1 red pepper, diced, and 1 clove garlic, crushed.
  2. Stir and add a 400g can chopped tomatoes, 1/2 teaspoon dried mixed herbs and 2 tablespoons tomato purée.
  3. Simmer for 20 minutes.
  4. Divide mixture into two and refrigerate or freeze.
