Soup with Pork Balls

Ingredients

  • 150 gms pork fillet
  • 1 teasp sage
  • ½ medium onion
  • 1 sm. potato, small
  • 1 teasp cornflour
  •   tomato purée
  • 1 sm. egg, small
  • 2 teasp soy sauce
  • 1 small onion, chopped
  • ½ broccoli and stalks, chopped
  • 1 teasp chives and parsley, chopped
  • sm. amount dried coriander
  • 1 med potato, chopped
  • 500 ml vegetable stock (or chicken)
  •   salt and pepper

Method

  1. For the pork balls: blitz all the pork ball ingredients (pork fillet, sage, onion, potato, cornflour, tomato purée, egg, soy sauce) in a mixer, then shape into balls and fry until cooked and browned.
  2. For the soup: heat oil and sweat onions. Add potato, all vegetables and salt and pepper. Sweat 2 minutes then add herbs and simmer in stock for 10 minutes.
  3. Drop the cooked pork balls into the hot soup and serve.

Notes

Recipe continues P.T.O. (over the page). The pork balls are blitzed, shaped, fried until cooked and browned, then dropped into the hot soup to serve.
