Sausage, Potato and Apple Kebabs

Serves 4 Prep 20 min Cook 35 min

Ingredients

  • 16 baby new potatoes
  • 8 thick pork sausages
  • 2 tbsp wholegrain mustard
  • 2 tbsp clear honey
  • 1 small onion, cut into 8 wedges
  • 2 eating apples, peeled, cored and cut into 8 wedges
  •   seasoning

Method

  1. Soak eight bamboo skewers in water for 15 minutes. Cook the potatoes in boiling, salted water for 10-15 minutes until just tender, then drain. Twist each sausage in half to make two, cut apart and prick lightly with a fork.
  2. Mix together the mustard, honey and seasoning. Thread the potatoes, sausages, onion and apple wedges on to the skewers.
  3. Brush each kebab with the mustard mixture and grill for 15-20 minutes, turning halfway through cooking, until golden brown all over. Serve hot with herb rice.

Notes

Serve hot with boiled rice tossed with chopped fresh mixed herbs.
