Ginger and Orange Pudding

Ingredients

  •   bought ginger cake, pulsed in food processor
  •   cream
  •   mixed spice
  •   soft brown sugar
  •   orange slices (tinned mandarin)
  •   melted chocolate
  • 1 oz butter
  • 2 ozs soft brown sugar
  •   orange juice
  • 2 ozs double cream, unwhipped

Method

  1. Pulse bought ginger cake in a food processor.
  2. Add cream and mixed spice to the processed ginger cake.
  3. Put a layer of soft brown sugar in a dish and cover with the cake mix.
  4. Add a layer of orange slices (tinned mandarin).
  5. Cover with melted chocolate and cream.
  6. Melt 1 oz butter in a pan, add 2 ozs soft brown sugar. Heat for 2-3 minutes until sugar is dissolved.
  7. Add orange juice and heat for 1-2 minutes.
  8. Add 2 ozs double cream (unwhipped) and stir until thickened. Pour over pudding.
