Potato Salad

Ingredients

  • 1 large tin potatoes, drained and rinsed (Jersey are very good)
  •   lemon juice, a little
  •   Hellmann's mayonnaise
  •   flaked almonds
  • ½ medium or 1 small onion, finely chopped
  •   salt and pepper
  •   chives, chopped
  • 1 shake paprika
  • 1-2 tablespoons raisins
  •   parsley

Method

  1. Drain and rinse potatoes. Sprinkle with a little lemon juice.
  2. Add all other ingredients.
  3. Taste and adjust seasoning.
  4. Best left 2 hours or overnight, covered in fridge.
