Ingredients

•   spread
•   caster sugar
• 3 eggs
• 225g self-raising flour
• 1 tsp baking powder
•   orange rind, grated, from 1 orange
• 4 tbsp reduced-fat crème fraîche
• 1 firm peach, stone removed, cut into chunks
• 100g raspberries

Method

1. Line a round cake tin with greaseproof paper.
2. Place the spread, caster sugar, eggs, flour, baking powder, orange rind and crème fraîche into a large mixing bowl and beat until smooth.
3. Spread the mixture in the cake tin.
4. Remove the stone from the peach and cut the peach into chunks, then scatter on top of the mixture. (Method continues on next part of card.)
