Liver Pâté and Orange Stuffing

Ingredients

  • ½ orange, grated rind only
  • 1 spring onions or onion, finely chopped
  •   salt and pepper
  • good pinch nutmeg
  • 1 parsley, freshly chopped
  • 1 egg yolk
  •   orange segments, from 1 orange, roughly chopped
  • 100g/4oz breadcrumbs
  • 100g/4oz continental liver sausage or liver pâté

Method

  1. Combine the orange rind, orange segments, spring onion or onion, breadcrumbs, seasonings, parsley and nutmeg.
  2. Work the liver sausage or pâté and egg yolk together, then work into the other ingredients.
