Ingredients
- ½ orange, grated rind only
- 1 spring onions or onion, finely chopped
- salt and pepper
- good pinch nutmeg
- 1 parsley, freshly chopped
- 1 egg yolk
- orange segments, from 1 orange, roughly chopped
- 100g/4oz breadcrumbs
- 100g/4oz continental liver sausage or liver pâté
Method
- Combine the orange rind, orange segments, spring onion or onion, breadcrumbs, seasonings, parsley and nutmeg.
- Work the liver sausage or pâté and egg yolk together, then work into the other ingredients.
