Cauliflower Crisp

Serves 4

Ingredients

  • 450g/1lb cauliflower, fresh or frozen
  • 25g/1oz English butter
  • 175g/6oz bacon, chopped
  • 225g/8oz mushrooms, sliced
  • 25g/1oz plain flour
  • 450ml/¾ pint fresh milk
  • 175g/6oz English Red Leicester cheese, grated
  •   salt and pepper
  • 2 tablespoons fresh breadcrumbs
  •   grilled bacon rolls, for garnish
  •   parsley, for garnish

Method

  1. Cook cauliflower in boiling, salted water until tender. Drain and put into a shallow, ovenproof dish.
  2. Meanwhile, heat butter in a saucepan and gently fry the bacon for 5 minutes, add mushrooms and fry for a further 3 minutes.
  3. Add flour and milk to the saucepan and, stirring continuously, bring to the boil and cook for 2 minutes.
  4. Remove from heat and stir in 100g/4oz cheese and seasoning to taste. Pour over the cauliflower.
  5. Combine the remaining grated cheese with breadcrumbs, sprinkle over the cauliflower and brown under a hot grill. Garnish with grilled bacon rolls, sprigs of parsley and a sprinkling of black pepper.
