Ingredients
- 450g/1lb cauliflower, fresh or frozen
- 25g/1oz English butter
- 175g/6oz bacon, chopped
- 225g/8oz mushrooms, sliced
- 25g/1oz plain flour
- 450ml/¾ pint fresh milk
- 175g/6oz English Red Leicester cheese, grated
- salt and pepper
- 2 tablespoons fresh breadcrumbs
- grilled bacon rolls, for garnish
- parsley, for garnish
Method
- Cook cauliflower in boiling, salted water until tender. Drain and put into a shallow, ovenproof dish.
- Meanwhile, heat butter in a saucepan and gently fry the bacon for 5 minutes, add mushrooms and fry for a further 3 minutes.
- Add flour and milk to the saucepan and, stirring continuously, bring to the boil and cook for 2 minutes.
- Remove from heat and stir in 100g/4oz cheese and seasoning to taste. Pour over the cauliflower.
- Combine the remaining grated cheese with breadcrumbs, sprinkle over the cauliflower and brown under a hot grill. Garnish with grilled bacon rolls, sprigs of parsley and a sprinkling of black pepper.
