Baked Winter Fruits

Serves 6

Ingredients

  • 3 large cooking apples
  • 3 pears, just ripe
  • 18 prunes
  • 12-18 figs, dried but moist
  • 18 soft dried apricots
  • 100ml apple juice
  • 1 small piece ginger, finely grated
  • pinch cinnamon
  • 25g flaked almonds, toasted
  • zest of 1 lime, zested
  •   Greek yoghurt

Method

  1. Cut unpeeled apples and pears into quarters and remove cores.
  2. Place in a microwaveable casserole dish and add the prunes, figs and apricots. Zest an orange and set zest aside.
  3. Squeeze the orange juice over the fruit and add apple juice, ginger and cinnamon.
  4. Microwave for 10 minutes at 70 per cent power, then stir and continue for 5 minutes at a time until fruits are soft but still intact.
  5. Serve with toasted almonds and orange and lime zests and Greek yoghurt.

Notes

Microwave at 70% power for 10 minutes, then stir and continue in 5-minute intervals until fruits are soft but still intact. Serve in a Pyrex Ceramic ovenware divider dish. An orange (for zest and juice) appears to be missing from the ingredients list based on the method instructions.
