Bread & Butter Pudding

Ingredients

  •   brown bread, sliced, buttered and spread with ginger marmalade, cut into triangles
  •   sultanas, soaked in rum, brandy or liqueur
  • 3 tablespoons sugar
  • 2 eggs
  •   milk
  •   butter, for dabbing on top
  • 1 tablespoon demerara sugar

Method

  1. Butter brown bread slices and spread with ginger marmalade. Cut into sandwiches, then into triangles, and place in an ovenproof dish.
  2. Soak some sultanas in rum, brandy or liqueur and sprinkle over the bread.
  3. Beat 3 tablespoons of sugar with 2 eggs, add milk and stir.
  4. Pour over the bread and leave to soak for 15–30 minutes.
  5. Dab with butter and sprinkle over 1 tablespoon of demerara sugar.
  6. Put in a moderate oven for 30 minutes.

Notes

Soak sultanas in rum, brandy or liqueur before sprinkling over the bread. Soak assembled pudding for 15-30 mins before baking.
