Ingredients
- ½ quantity Basic White Bread Dough
- flour, for dusting
- egg glaze, beaten
- greased baking trays
Method
- Knock back the proved dough.
- For baps or softies, divide dough into 15 equal portions. Shape into balls. To make baps, press the balls to make flat circles of dough, about 2 cm (¾ in) thick. Arrange on baking trays. To make softies, arrange the balls, well-spaced, on baking trays.
- For rolls, divide dough into 22 equal portions, shape into balls, mini plaits or mini cottage loaves and place on baking trays.
- Cover the shaped dough with oiled cling film and leave to rise in a warm place until doubled in size — 15 to 30 minutes.
- Meanwhile, heat the oven to Gas Mark 8, 450°F, 230°C.
- Glaze rolls with beaten egg.
- Bake baps, softies and rolls for 15 to 20 minutes.
- Cool rolls on a wire rack. Dust baps and softies with flour as soon as they come out of the oven, then wrap in a clean tea-towel and leave to cool.
