Welsh Rarebit

Ingredients

  • 2 oz butter
  • 4 oz Red Leicester
  • 1 egg yolk
  • 1 oz Wensleydale
  • 3 tbsp cider
  • 1 tsp grain mustard
  • 2 tsp Worcester sauce
  • 1 tbsp plain flour
  • pinch paprika

Method

  1. Melt butter in pan, add all cheese and cider over very low heat. Mix until all gooey.
  2. Add mustard, Worcester sauce, flour, paprika and egg yolk. Cook slowly for about 5 minutes.
  3. In the meantime, toast bread on one side only.
  4. Pour mix over carefully using a large spoon. Grill until bubbling and serve at once.
