Salmon

Ingredients

  • 1 lime, juiced
  •   coriander, to taste
  • a small amount red onion, finely chopped
  •   cucumber, thin slices
  •   grapefruit, roughly chopped
  •   salmon, sliced

Method

  1. Make the marinade: combine lime juice (1 lime), coriander to taste, a small amount of finely chopped red onion, thin slices of cucumber, and roughly chopped grapefruit.
  2. Leave sliced fish covered in the marinade for 3-4 hours or overnight in the fridge.
  3. Can be eaten RAW or cooked in oven (Gas Mark 7) covered in foil for 5-10 mins.
