Ingredients
- 1 lime, juiced
- coriander, to taste
- a small amount red onion, finely chopped
- cucumber, thin slices
- grapefruit, roughly chopped
- salmon, sliced
Method
- Make the marinade: combine lime juice (1 lime), coriander to taste, a small amount of finely chopped red onion, thin slices of cucumber, and roughly chopped grapefruit.
- Leave sliced fish covered in the marinade for 3-4 hours or overnight in the fridge.
- Can be eaten RAW or cooked in oven (Gas Mark 7) covered in foil for 5-10 mins.
