Pipérade

Serves 3

Ingredients

  • 1 large onion, sliced
  • 1 green pepper, sliced
  • 2 tablespoons oil
  • 1 clove garlic, finely chopped and crushed (optional)
  • ¾ lb tomatoes, skinned, deseeded and roughly chopped
  • 6 eggs, beaten
  • 1 tablespoon water
  •   salt and pepper

Method

  1. Prepare and slice a large onion and a green pepper.
  2. Heat 2 tablespoons oil in a large omelet pan and add the vegetables. If liked, finely chop and crush a clove of garlic and add this. Fry gently for about 10 minutes until the vegetables are soft.
  3. Skin and deseed ¾ lb tomatoes; roughly chop and add to the pan. Cook gently, stirring occasionally for 3 minutes.
  4. Meanwhile beat 6 eggs in a bowl and add 1 tablespoon water and salt and pepper. Pour this into the pan and stir round gently to make a large open omelet.

Notes

This is a famous Basque dish combining onions, peppers and tomatoes with eggs. Sometimes it is made like scrambled eggs or simply with fried eggs served on top of the vegetable mixture. It is probably most delicious as an open omelet, hot or cold.
