Potato Latkes

Serves 4-6

Ingredients

  • 1lb/450g potatoes
  • 1 onion
  • 2 eggs
  • 1 teaspoon salt
  •   freshly ground black pepper
  • 1 teaspoon brown sugar
  • 1oz/25g wholemeal flour
  • 1 teaspoon baking powder
  •   oil, for frying

Method

  1. Peel and grate the potatoes and onion finely.
  2. Beat the eggs until they become frothy and add them to the potato and onion mixture, together with all the other ingredients.
  3. Heat a little oil in a frying pan and drop tablespoonsful of the mixture into the hot oil. Fry on both sides until golden brown and serve warm.
