Mini Baked Potatoes with Cheese and Bacon

Serves 20 Prep 15 min Cook 45 min

Ingredients

  • 20 small new potatoes
  • 2oz/55g streaky bacon, grilled and diced
  • 2oz/55g cheddar cheese, grated
  • 1 tbsp chives, chopped
  •   melted butter, a little
  •   salt
  •   freshly ground black pepper

Method

  1. Preheat the oven to 200°C/400°F/gas mark 6.
  2. Scrub the potatoes and bake in the oven for about 45 minutes, or until cooked.
  3. Cut a slice from the top of each potato. Scoop out the centre and mix with the remaining ingredients.
  4. Pile the filling back into the potatoes.
  5. If necessary, heat through in the oven for a few minutes.
