Ingredients
- 20 small new potatoes
- 2oz/55g streaky bacon, grilled and diced
- 2oz/55g cheddar cheese, grated
- 1 tbsp chives, chopped
- melted butter, a little
- salt
- freshly ground black pepper
Method
- Preheat the oven to 200°C/400°F/gas mark 6.
- Scrub the potatoes and bake in the oven for about 45 minutes, or until cooked.
- Cut a slice from the top of each potato. Scoop out the centre and mix with the remaining ingredients.
- Pile the filling back into the potatoes.
- If necessary, heat through in the oven for a few minutes.
