Stir Fried Brussels Sprouts with Lemon and Bay Cream

Ingredients

  • 3 tbsp sunflower oil
  • 2 garlic cloves, chopped
  • 1kg/2lb Brussels sprouts, halved
  • 4 tbsp double cream
  • 2 bay leaves
  • 4 strips lemon rind
  •   seasoning

Method

  1. Heat the oil in a large pan, add the garlic and stir fry briefly. Add the Brussels sprouts and stir fry for 2-3 minutes until they just start to soften.
  2. Pour in the cream with the bay leaves and lemon rind and simmer for 3 minutes, then strain over the sprouts just before serving.
