Cassoulet (Lamb)

Ingredients

  •   leek, finely chopped
  •   onion, finely chopped
  •   baked beans
  • 1½ oz butter
  •   stock
  •   lamb steak or rump

Method

  1. Finely chop leek and onion and fry until soft (about 6 mins).
  2. Add baked beans and 1½ oz butter, and stock. Lower heat.
  3. Seal lamb (steak or rump) on all sides in a frying pan.
  4. Place on a hot dish in oven (Gas 7 / high heat) for 25–30 mins.
  5. Serve with mash and the cassoulet.
