Ingredients
- 100g/3¾oz butter
- 100g/3¾oz caster sugar
- 100g/3¾oz self-raising flour
- 2 eggs
- 1 lemon, grated rind
- 150g/5½oz lemon curd
- custard or cream, to serve
Method
- Place the butter, sugar, flour and eggs in a food processor or blender and whizz until well mixed. Alternatively, place in a large bowl and beat with an electric whisk until smooth.
- Stir in the lemon rind and sultanas. Place two tablespoons of lemon curd in the base of four microwave-proof teacups or large ramekins, then spoon the sponge mixture on top.
- Loosely cover each cup with microwave film and cook on High/PL9 for 5¾ minutes until firm and well risen. Turn out on to serving plates and serve with custard or cream.
Notes
These speedy puddings can be cooked as one large pudding - use a 1 litre/1¾ pint pudding basin and microwave on High/PL9 for 8 minutes. Loosely cover each cup with microwave film before cooking.
