Welsh Rarebit

Ingredients

  • 4 small slices bread
  • 8 oz Cheddar cheese, grated
  • 1 oz butter
  • 1 level teaspoon dry mustard
  •   salt and ground black pepper
  • 4 tablespoons brown ale

Method

  1. Toast the bread on both sides until golden.
  2. Place the other ingredients in a heavy-based pan and heat very gently until creamy.
  3. Pour over the toast and place under a hot grill until golden and bubbling.
