Ingredients
- 2 courgettes, chopped
- 1 red onion, sliced
- 1 garlic clove, sliced
- 10 cherry tomatoes, halved
- 1tbsp olive oil
- 125g (4oz) feta, chopped
- 25g (1oz) pitted black olives
Method
- Preheat oven to 200°C (fan 180°C) mark 6.
- Put the chopped courgettes, sliced red onion, sliced garlic clove and halved cherry tomatoes into a roasting tin; drizzle with the olive oil.
- Cook for 30-40 minutes or until tender. Add the chopped feta for the last 5 minutes of cooking time.
- Tip into a sealable container. Stir in the pitted black olives.
Notes
Any time you have the oven on, make a batch of this roasted veg. It will keep in the fridge for up to four days and can be eaten cold for lunch. Prepare ahead.
