No-hassle Roast Veg

Serves 4 portions Cook 40 min

Ingredients

  • 2 courgettes, chopped
  • 1 red onion, sliced
  • 1 garlic clove, sliced
  • 10 cherry tomatoes, halved
  • 1tbsp olive oil
  • 125g (4oz) feta, chopped
  • 25g (1oz) pitted black olives

Method

  1. Preheat oven to 200°C (fan 180°C) mark 6.
  2. Put the chopped courgettes, sliced red onion, sliced garlic clove and halved cherry tomatoes into a roasting tin; drizzle with the olive oil.
  3. Cook for 30-40 minutes or until tender. Add the chopped feta for the last 5 minutes of cooking time.
  4. Tip into a sealable container. Stir in the pitted black olives.

Notes

Any time you have the oven on, make a batch of this roasted veg. It will keep in the fridge for up to four days and can be eaten cold for lunch. Prepare ahead.
