Basque Wild Rabbit with Peppers

Serves 4

Ingredients

  • 4 tbsp olive oil
  • 2 wild rabbits, each cut into 8 pieces
  • 3 garlic cloves, chopped
  • 100g/4oz smoked ham, chopped
  • 75g/3oz chorizo sausage, chopped
  • 1kg/2lb beef tomatoes, skinned, seeded and finely chopped
  • 3 onions, finely chopped
  • 2 red and 2 green peppers, seeded and sliced
  • 2 tbsp fresh parsley, chopped
  •   seasoning

Method

  1. Heat half of the oil in a large frying pan. Brown the rabbit for 15 minutes. Add the garlic, ham, sausage and seasoning and cook for 5 minutes.
  2. Meanwhile, heat remaining oil in another pan. Add tomatoes and onions. Cook for 20 minutes.
  3. Remove rabbit, sausage and ham with a slotted spoon. Set pan aside. Place the meats on top of the tomatoes and onions. Cover and cook for 40 minutes until the rabbit is tender.
  4. Just before serving, cook the peppers for 4 minutes in the oil used for the rabbit, then add to the rabbit. Cover and cook for 4 minutes. Add parsley and serve.
