Salmon Fish Cakes

Ingredients

  • 350gms salmon, tinned
  • 50gms butter
  • 1 egg
  • 125gms breadcrumbs, fresh
  • 1 lime, juice only
  • 1 teasp mustard
  • 2 teasp Worcester sauce
  •   spring onions, chopped
  •   salt and pepper
  •   Tabasco or chilli
  •   coriander, chopped
  •   mayonnaise

Method

  1. Put all ingredients together in a food mixer and process to taste — then taste.
  2. Shape mix into cakes and fry.
  3. Mix mayo with chopped coriander to serve.
