Apple and Cinnamon Rock Cakes

Ingredients

  • 100g/4oz self-raising flour
  • 100g/4oz wholewheat flour
  • ¼ tsp baking powder
  • 1 tsp ground cinnamon
  • 100g/4oz butter or margarine
  • 1 eating apple, peeled, cored and finely chopped
  • 75g/3oz caster sugar
  • 50g/2oz raisins
  • 1 egg, beaten
  • 3 tbsp milk
  •   caster sugar, for sprinkling

Method

  1. Preheat oven to 200C/400F/Gas 6. Sift the flours with baking powder and cinnamon. Cut the fat into small pieces and rub into the flour mixture.
  2. Stir in the apple, sugar and raisins, then add the egg and milk and mix to a stiff dough. Use two forks to pile 12 rough heaps of the mixture on to a greased baking sheet.
  3. Bake for 12-15 minutes until the cakes are golden. Cool on a wire rack and sprinkle with a little caster sugar before serving.
