Ingredients
- 400g (14oz) strawberries, halved
- 2 nectarines, halved, stoned and sliced
- 125g (4oz) raspberries
- 1 vanilla pod, cut in half lengthways, seeds scraped out
- 2tbsp maple syrup
- 1tbsp water
Method
- Put 400g halved strawberries, 2 halved, stoned and sliced nectarines and 125g raspberries into a bowl.
- Cut 1 vanilla pod in half lengthways and, using the tip of a sharp knife, scrape the seeds into a bowl.
- Add 2tbsp maple syrup and 1tbsp water, stir, then pour over the fruit.
- Toss to coat. Cover and chill for 2 hours, stirring occasionally.
- Serve with a dollop of low-fat Greek yogurt or low-fat fromage frais.
