Ingredients
- 1 lb icing sugar, sieved
- 1 teasp. lemon juice
- 1 large egg white
- colouring, if required
Method
- Sieve the icing sugar into a mixing bowl.
- Add egg white and lemon juice and whisk until smooth, glossy and very white.
- Cover with a damp cloth to prevent drying out during use.
- Spread with a very wet, very hot knife or spatula over almond paste and pipe to decorate.
