Royal Icing

Ingredients

  • 1 lb icing sugar, sieved
  • 1 teasp. lemon juice
  • 1 large egg white
  •   colouring, if required

Method

  1. Sieve the icing sugar into a mixing bowl.
  2. Add egg white and lemon juice and whisk until smooth, glossy and very white.
  3. Cover with a damp cloth to prevent drying out during use.
  4. Spread with a very wet, very hot knife or spatula over almond paste and pipe to decorate.
