Salmon and Thyme Parcels

Ingredients

  • 4 tomatoes, deseeded and chopped
  • 4 salmon fillets
  • 2 garlic, crushed
  • 50g/2oz butter, softened
  • 2 tbsp fresh thyme or lemon thyme leaves

Method

  1. Divide tomatoes between four pieces of lightly oiled greaseproof paper. Top with a salmon fillet and season with salt and freshly ground black pepper.
  2. In a small bowl, mix garlic with butter and thyme, and then dot over salmon. Fold up paper and fold over edges to close.
  3. Microwave on high power for 5 mins till fish is cooked through. Serve garnished with thyme sprigs, accompanied by fresh vegetables.

Notes

Cod fillets work just as well as salmon.
