Potatoes with Leeks and Cheese

Ingredients

  •   potatoes, thinly sliced
  •   leeks, sliced
  •   cheese, grated
  •   smoked fish, fried in a little olive oil, 2-3 mins each side
  • a little olive oil

Method

  1. Thinly slice potatoes and layer in a dish.
  2. Cover with sliced leeks, then add another layer of potato slices.
  3. Top with grated cheese.
  4. Put in centre of oven at Gas Mark 6 for 40-50 minutes.
  5. Serve with fried pieces of smoked fish, fried plain in a little olive oil for 2-3 minutes on each side.
