Stuffed Mushrooms

Ingredients

  • 4 large flat mushrooms, large flat, skin and remove stalks; chop stalks
  • 2lb new potatoes, boiled, then sliced and fried until brown
  • 6 part baked rolls or baguettes, part baked
  • 2 rashers thick bacon, cut into small pieces
  • ½ medium onion, finely chopped
  • 3 tomatoes, quartered
  •   grated cheese
  •   butter, for frying

Method

  1. Put bread in oven for 8–10 mins.
  2. Fry bacon in fat for 2 mins.
  3. Fry tomatoes in butter for 1–2 mins. Add onion to tomatoes and cook for 2 mins.
  4. Drain bacon and add to tomato mix. While it is cooling, skin mushrooms and take out stalks. Chop stalks and add to cooling mix.
  5. Fill mushrooms with mix and cover with grated cheese. Put in oven for 12–14 mins.
  6. Slice potatoes and fry until brown.
  7. Serve with salad.
