Ingredients
- 4 large flat mushrooms, large flat, skin and remove stalks; chop stalks
- 2lb new potatoes, boiled, then sliced and fried until brown
- 6 part baked rolls or baguettes, part baked
- 2 rashers thick bacon, cut into small pieces
- ½ medium onion, finely chopped
- 3 tomatoes, quartered
- grated cheese
- butter, for frying
Method
- Put bread in oven for 8–10 mins.
- Fry bacon in fat for 2 mins.
- Fry tomatoes in butter for 1–2 mins. Add onion to tomatoes and cook for 2 mins.
- Drain bacon and add to tomato mix. While it is cooling, skin mushrooms and take out stalks. Chop stalks and add to cooling mix.
- Fill mushrooms with mix and cover with grated cheese. Put in oven for 12–14 mins.
- Slice potatoes and fry until brown.
- Serve with salad.
