Ingredients
- 2 lb cooked ham, minced
- 1 lb mushrooms, finely chopped
- 3 teasp mixed herbs
- seasoning
- 2 lb cooked mashed potatoes
- 2 eggs, lightly beaten
- 6 eggs, beaten, for coating
- 12 oz browned breadcrumbs, for coating
- tomatoes, sliced, for garnish
- lemon, cut into cones, for garnish
- parsley, sprigs, for garnish
Method
- Mince the ham and finely chop the mushrooms.
- Mix the ham and mushrooms together with the herbs, seasoning, mashed potato and lightly beaten eggs.
- Chill the mixture to firm it up.
- Form the mixture into 2-inch rounds.
- Coat the rounds in beaten egg and then in browned breadcrumbs.
- Fry in shallow fat for about 5 minutes on each side.
- Garnish with slices of tomato, lemon cones and sprigs of parsley. Serve hot or cold.
Notes
Can be made the day before. Serve hot or cold — reheat in the oven for 10 minutes. Costs approx: £2-10.
