Ingredients
- broccoli, stalks removed, washed
- 1 large shallot, softened
- 1oz butter
- 1 bay leaf
- 4 tablespoons white wine vinegar
- a little chicken stock
- 2 tablespoons single cream
- 2oz butter
- salt and pepper
- 1 tablespoon mustard
Method
- Remove stalks from broccoli and wash.
- Soften 1 large shallot in 1oz butter. Add 1 bay leaf, 4 tablespoons white wine vinegar, and a little chicken stock. Bring to boil and simmer 2 minutes.
- Add 2 tablespoons single cream and 2oz butter. Season with salt and pepper. Strain, then add 1 tablespoon mustard.
- Serve the mustard sauce over the broccoli.
Notes
Remove stalks from broccoli and wash.
