Broccoli in Mustard Sauce

Ingredients

  •   broccoli, stalks removed, washed
  • 1 large shallot, softened
  • 1oz butter
  • 1 bay leaf
  • 4 tablespoons white wine vinegar
  • a little chicken stock
  • 2 tablespoons single cream
  • 2oz butter
  •   salt and pepper
  • 1 tablespoon mustard

Method

  1. Remove stalks from broccoli and wash.
  2. Soften 1 large shallot in 1oz butter. Add 1 bay leaf, 4 tablespoons white wine vinegar, and a little chicken stock. Bring to boil and simmer 2 minutes.
  3. Add 2 tablespoons single cream and 2oz butter. Season with salt and pepper. Strain, then add 1 tablespoon mustard.
  4. Serve the mustard sauce over the broccoli.

Notes

Remove stalks from broccoli and wash.
