Ingredients
- 3 eggs
- weight of eggs butter or margarine
- weight of eggs caster sugar
- weight of eggs plain flour
- 1 teaspoonful baking powder
Method
- Put the butter and sugar into a mixing bowl and whisk at fast speed until light and fluffy.
- Whisk in the eggs one at a time until thoroughly blended.
- Sieve the flour and baking powder together.
- Add the flavouring and the remaining ingredients, whisking at slow or medium speed.
- Pour into greased and floured 8" sponge sandwich tins and bake at 400°F (Gas 6) for 25 minutes.
Notes
Use the weight of the eggs as the measure for the butter/margarine, caster sugar, and plain flour. Flavouring as required.
