Ingredients

  • 3 eggs
  • weight of eggs butter or margarine
  • weight of eggs caster sugar
  • weight of eggs plain flour
  • 1 teaspoonful baking powder

Method

  1. Put the butter and sugar into a mixing bowl and whisk at fast speed until light and fluffy.
  2. Whisk in the eggs one at a time until thoroughly blended.
  3. Sieve the flour and baking powder together.
  4. Add the flavouring and the remaining ingredients, whisking at slow or medium speed.
  5. Pour into greased and floured 8" sponge sandwich tins and bake at 400°F (Gas 6) for 25 minutes.

Notes

Use the weight of the eggs as the measure for the butter/margarine, caster sugar, and plain flour. Flavouring as required.
