Pasadena Pudding

Ingredients

  • 230g, 8oz California Raisins
  • 45ml, 3 tbsp brandy
  • 5ml, 1 tsp mixed spice or allspice
  • pinch ground cloves
  •   orange, zest only
  • 75g, 3oz caster sugar
  •   buttered bread, sliced
  • 3 eggs, beaten
  • 500ml, 1 pint milk

Method

  1. Soak the raisins in brandy for at least one hour.
  2. Mix the spice and orange zest into the sugar.
  3. Cut the bread into triangles and cut the crusts off.
  4. Layer the bread with the raisins, scattering the spiced sugar over each layer in an open ovenproof dish or pie dish which has been well buttered.
  5. Beat the eggs into the milk. Pour carefully over the bread. Leave to soak for 10 minutes.
  6. Bake for one hour at 180C, 350F, Gas Mark 4. Serve hot or cold with clotted cream.
