Ingredients
- 4 medium eggs, separated
- 2tbsp mixed herbs, chopped
- salt
- freshly ground black pepper
- 100g Taleggio cheese, finely chopped
- 2tsp olive oil
Method
- Beat the egg yolks together with the herbs. Whisk the egg whites to a soft peak, then fold into the yolk mixture with the seasoning and half the cheese.
- Heat the olive oil in two small non-stick omelette pans, divide the egg mixture between them and cook until just beginning to turn golden underneath. Pop the pans under a preheated grill.
- When the omelettes begin to rise, sprinkle over the rest of the cheese and return to the grill until it melts. Fold omelettes in half and serve with salad.
